Roasted Sweet Potato & Macadamia Nut Salad
Ingredients
- 200g orange sweet potato, peeled
- 1 tablespoon olive oil
- 130gms of fresh pre washed ready to use Mainland Fresh Mesclun
- 1/2 punnet cherry tomatoes
- 1 cucumber, thinly sliced
- 1/4 cup macadamia nuts, chopped
Dressing
- 2 tablespoons macadamia nut oil (or olive oil)
- 1 tablespoon balsamic vinegar
- ½ teaspoon salt (optional)
Directions
- Cut sweet potato into half-centimetre slices, brush with oil.
- Roast in a hot oven on 200°C for approx. 20 minutes or until tender and golden.
- Place Mesclun, tomatoes and cucumber in a serving bowl.
- Combine dressing ingredients and drizzle over salad. Toss gently.
- Top with roasted sweet potato and macadamia nuts.
