Ingredients

  • 200g orange sweet potato, peeled
  • 1 tablespoon olive oil
  • 130gms of fresh pre washed ready to use Mainland Fresh Mesclun
  • 1/2 punnet cherry tomatoes
  • 1 cucumber, thinly sliced
  • 1/4 cup macadamia nuts, chopped

Dressing

  • 2 tablespoons macadamia nut oil (or olive oil)
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon salt (optional)

Directions

  1. Cut sweet potato into half-centimetre slices, brush with oil.
  2. Roast in a hot oven on 200°C for approx. 20 minutes or until tender and golden.
  3. Place Mesclun, tomatoes and cucumber in a serving bowl.
  4. Combine dressing ingredients and drizzle over salad. Toss gently.
  5. Top with roasted sweet potato and macadamia nuts.
